Un-Carne Tacos

These fall into the category of Messy-but-Worth-It. Boyfriend sez they’re better than regular tacos. (Yahoo!)

Also super delish (and faster) is filling the taco shells with just salted avocado slices and Cheezy Sauce. We alternated.

Un-Carne Tacos Recipe 

For the Un-Carne

  • 1 1/2 cups walnuts
  • 1 1/2 cups pecans
  • 8 oz (1 cup) pure tomato sauce (Muir Glenn is fantastic)
  • 2 garlic cloves, large, finely diced
  • 1 – 2 Tbsp extra virgin olive oil
  • 1 1/2 tsp nutritional yeast
  • 1 1/2 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp cayenne
  • 1/2 tsp cumin
  • 1/2 tsp birch xylitol
  • 1/2 tsp pink Himalayan sea salt, to taste

For the Cheezy Sauce

  • 2 cups raw macadamia nuts, soaked overnight in water (or 30 min in boiling hot water)
  • 3 Tbsp fresh lemon juice
  • 1/4 cup nutritional yeast
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp pink Himalayan sea salt
  • 1/4 cup water + more til desired consistency

For the Tacos and Toppings

1. Make the Un-Carne

In small batches, smash nuts into a rough, chunky consistency by either pulsing ever so slightly in a food processor or placing into a large Ziploc bag and hitting with the flat side of a meat cleaver or the back of a large spoon. Set aside.

In small bowl, mix together nutritional yeast, paprika, cayenne, onion powder, cumin, birch xylitol and sea salt. Set aside.

In large pot on medium, warm garlic in olive oil, stirring constantly. Stir in tomato sauce then add all dry ingredients, mixing til nuts are well coated.

2. Make the Cheezy Sauce

Drain soaked nuts, discarding water. In high speed blender, pulse nuts, lemon juice, nutritional yeast, spices, salt and water til roughly combined. Blend, stopping at 30 second intervals to scrape down sides, adding more water gradually til creamy and smooth, the consistency of a thick nacho cheese sauce, about 1 or 2 min total.

3. Assemble the tacos

Spoon Un-Carne into warmed taco shells, topping with Cheezy Sauce and your choice of avocado, olives and/or scallions. Enjoy!
