Momma made this for me tonight. If I like it I sometimes will ask her to write out the recipe for me and I’ve got a big stack of index cards to show for it. Well tonight momma was so confident she didn’t even wait for the taste test, coming in with the plate *and* the card.
And she was right, I loved it. The cherries add a tangy little twist to one of my favorite veggies.

Sweet potato with cherries and salted pecans recipe
- 2 medium sweet potatoes, peeled and sliced
- 1/4 cup whole pecans
- 2 tbsp dried cherries
- 1 tbsp + 1 tbsp coconut oil
- pinch cinnamon (optional)
- 2 pinches salt (to taste)
In large frying pan on medium low heat, cook sweet potatoes with 1 tbsp coconut oil and a pinch of salt, covered, til tender. In separate pan coated with 1 tbsp coconut oil, sprinkle pecans with a pinch of salt and a pinch of cinnamon (optional), add dried cherries and sauté til warm. Pile sweet potatoes on a plate, cover with pecans and cherries and enjoy!
