Sweet Potato Chowdah Recipe
- 2 large sweet potatoes, peeled and cut into cubes
- water to cook in
- 2 stalks celery, diced
- 2 carrots, diced
- 1 small onion, diced
- 1 tbsp coconut oil or extra virgin olive oil
- 1/2 cup coconut cream
- salt and pepper to taste
Cook sweet potatoes (just barely covered with water) in pot, til soft. Do NOT drain sweet potatoes when done cooking. Sauté celery, carrots and onion in oil in frying pan. Set aside 1 tbsp sauteéd veggies for garnish. Pureé cooked sweet potatoes and the water they were cooked in. Gently stir in coconut milk, sautéed veggies and salt and pepper to taste. Garnish with a sprinkling of sautéed veggies. Enjoy immensely!
