I’m a big fan of easy. Didja know that ’bout me? Well it’s true.
That’s why when I finally got down what I was gonna use for this recipe and the time came for the “how,” well … what sounded *really* good to me was somethin’ like “throw it all into the blender and boom!”

I used my Ninja single serve. You can use that too … or a Magic Bullet … or whatever blendy tool makes you smile!
I liked it served right away, still smooth and sorta warm from the blending. If it’s not quite warm yet, blend it another few minutes.
If you have this the next day, kept cool in the fridge, you may want to stir in just a little more water to smoothen it up first cuz it may thicken over time.

Smooooth Goji Cashew Chia Pudding Recipe
- 1 3/4 cup water
- 1 tbsp coconut butter
- 3 dates, pitted
- 1 tbsp maple syrup
- 1/4 tsp coarse kosher salt
- 1/2 tsp pure vanilla extract
- 1/3 cup chia seeds
- 1 tbsp cashew butter
- 2 tbsp goji berries (*or dried cranberries)
- Handful cashews (optional)
Blend all ingredients except goji berries til smooth, about 1 minute. Mix in the goji berries (and cashews if you like) and enjoy!
* By the way, if you’re avoiding nightshades, swap out the the goji berries for dried cranberries.

Hi! The chia pudding recipe looks great– just want to clarify the amount of water used. Is it one AND 3/4 cups (ie almost 2 cups) or is it 8 oz. ( which = 1 cup)? Thanks!
