Oniony Sunflower Cashew Cream Dip

This is great for comfort-fooding up a buncha steamed veggies.

Currently going through my playlist of old favorites and so far it works well with cauliflower, broccoli and Le Pain des Fleurs Ancient Grains crackers.

I know, I know, so specific. These are the cleanest crackers I know which have a nice mellow flavor so you can enjoy the flavor of the dip.

So so far there’s cauliflower, broccoli (my fave veggie for this dip) and these crackers…

Oh and alone by the spoonful too, I’m not ashamed to admit.

2 am hunger pangs. Desperate times.

Oniony Sunflower Cashew Cream Dip Recipe 

  • 1 cups raw cashews, whole (soaked 20 min in hot water*)
  • 1/2 cup sunflower seeds, plain, unsalted (soaked 20 min in hot water*)
  • 1/2 cup water
  • 1 tbsp + 2 tsp coconut oil
  • 1 tsp onion powder
  • 1 tsp kosher salt, to taste
  • Optional, for garnish: Tamari sunflower seeds

Drain soaked cashews and plain sunflower seeds then add to other ingredients in high speed blender or bullet. Blend til ultra smooth and creamy. In the bullet blender, this took 2 minutes, stopping every 30 seconds to shake the cup.

Serve over steamed veggies with a sprinkling of tamari sunflower seeds on top. Enjoy!

* Tip: I first put the nuts and seeds in a glass measuring cup and covered them with boiling water to soften ’em up. Then strained the water off.
