Tis the season for healthier yummies!
Aaah, Navitas Naturals, how I do love you! Nearly all of these ingredients can be found on the Navitas shelf in your organic grocery. They make some of the purest superfoods around. (And you guys *know* how I am about *that*!)

Maca Cashew Crunch Truffles Recipe
- 1/8 cup + 1/8 cup raw cashews
- 1/8 cup + 1/8 cup sweet cacao nibs*
- 1/8 cup coconut sugar
- 1 tbsp maca powder
- 1/4 cup cacao butter, melted
- 1/4 cup coconut butter, softened
- 1/8 cup maple syrup
- 1 tsp vanilla extract
- 1/8 tsp kosher salt
- Optional: 2 additional tbsp coconut sugar or coarse sea salt, for coating
Blend in food processor 1/8 cup cashews, 1/8 cup sweet cacao nibs, coconut sugar, maca, cacao butter, coconut butter, maple syrup, vanilla, salt and til well combined. Add second 1/8 cup cashews with 1/8 cup sweet cacao nibs and pulse about 10 seconds leaving mixture a bit chunky.
Refrigerate 10 min or pop into the freezer a few minutes to firm up a bit.
Form mixture into balls with measuring teaspoon or melon baller.
Optional: Roll balls in coconut sugar or coarse sea salt.
Refrigerate on large plate for an hour to set then enjoy!
* Note: I used Navitas Naturals sweet cacao nibs. Theirs are more sweet (“yah, we caught onto that, Col” 😉) and less bitter than others I’ve tried. If your cacao nibs are not the sweet kind, you can halve the amount and only add it in during the second pulse.
