They make me smile (a crunchy little chocolate chippedy type smile) in oatmeal, n’ice cream and, of course, you guessed it … lemony ginger balls.

Lemony Ginger Balls Recipe
- 1 cup old fashioned oatmeal
- 2 tbsp cashew butter
- 1 1/2 tsp fresh grated ginger root (or pulp from ginger bombs)
- 2 tsp lemon juice (or 1 tsp if you used ginger bomb pulp) to taste
- 2 tsp raw honey or birch xylitol
- 1/2 tsp pure vanilla
- 2 tsp cacao sweet nibs
- 1 tsp water
- 1 dash Himalayan pink sea salt
In medium bowl, mix together all ingredients. Roll into heaping tsp sized balls and enjoy.
Recipe makes about 14 balls, yaay!
