Healthy onion rings … could it be?
I love creating clean versions of decadent treats and this one was a success. One’a those (gleeful hand clapping) “Yaaay, I don’t feel deprived!!!” recipes.
Credit goes to momma, who got the idea one day while dicing (well, *almost* dicing … they never did quite make it to fully chopped status) some onions to add to a clean meal she was so kindly making for me. “Hey, these look like onion rings! Do you have some flour which is not flour?”
A question that may seem odd in other households but not ’round here. If ever you want a thing that it not a thing, come see me. I’ve gotten pretty good at all sorts of trickery and tomfoolery in the kitchen, all in the name of making things my body will like, to heal rather than hurt. A worthy goal, hmm?

Healthy Onion Rings Recipe
- 1 cup sprouted black bean flour
- 1 egg yolk
- 3 egg whites
- 1 medium white onion, cut into rings
- 1 tbsp virgin coconut oil
- 1 tbsp extra virgin olive oil
Whip egg whites and yolks til blended. Dip onion rings in egg then coat with flour. Heat oils in large frying pan then cook rings on medium high heat til crispy. Drain on paper towel then enjoy warm!
