What’s that they say about necessity being the mother of invention?
So Momma brought me green beans.
(Something I pretty much *never* buy on my own. Aren’t these things kinda sorta not exactly the most delicious things you’ve ever had in all of your food adventures? Least that’s what my faulty memory banks led me to believe.)
But I needed to eat.
I had zero energy for cooking.
Chopping an onion? Are you kidding me right now? 😉
So BAM Easy Oniony Green Beans were born.
Thank you, Necessity!
PS: Turns out these were deceptively delicious ‘n I wished I had more. Take that, memory banks!

Easy Oniony Green Beans Recipe
- 2 cups fresh green beans
- 1 tbsp coconut oil (heated to soften, if necessary)
- 1 tsp lemon juice
- 1/2 tsp onion powder
- 1 pinch kosher salt while cooking + sprinkle salt for garnish
- pinch black pepper
Set steamer basket into large pot with water filled to a level just beneath bottom of steamer (so water does not come through holes). Bring water to a boil. Add green beans and cover, steaming to a tenderness you like, about 5 to 7 min.
Mix all other ingredients in large bowl then add hot green beans, stirring to coat. Sprinkle with salt, to taste. (The salt will bring out the other flavors.) Enjoy!
