This one was inspired by Mandy, who sent me a pic of her friend’s pre-packaged protein bar mix. (Who knew they even made such a thing! I had no idea!)
Not bad but methinks we can do better! 😉
It’s so awesome to make things yourself, so you get to choose what goes in there and just use what works best for you … Only the clean stuff for us! (Of course.)

Crunchy Choco Nutbutter Protein Squares Recipe
For the squares:
- 1 cup gluten-free rolled oats
- 2 scoops Sunwarrior Classic Vanilla protein powder
- 4 dates
- 1 tbsp flaxseed
- 1 tbsp chia seeds
- 2 tbsp coconut oil
- 1/4 cup + 1 tbsp sunflower seed butter
- 2 pinches salt
- 1 tbsp cacao nibs
For the coating:
- 1 tbsp cocoa powder (Rapunzel Organic is great)
- 1 tbsp coconut oil
- 2 tsp pure maple syrup
In food processor on high speed, blend all ingredients except cacao nibs til pasty, about 5 min, scraping down sides periodically when necessary. Mix in cacao nibs by hand, distributing evenly. Press firmly into loaf pan lined with parchment paper. Pop into freezer to set while you make chocolate coating.
In small bowl, mix cocoa powder, coconut oil and maple syrup til well blended. Smooth on top of protein bar loaf and return to freezer to firm up, about an hour. Remove and cut into 6 even squares. Enjoy!
PS: Keep leftovers in freezer.
