You guys, the best thing in the world happened! A couple of ’em actually.
Thing one: My friend Maria came over to make beans for me.
Which is pretty amazing already, in and of itself.
Thing two: We didn’t have the right ingredients.
Yahooooo!
And so, a new recipe was born.
Lucky us!
And I loved it even more.

Creamy Friendship Beans Recipe
- 1 cup kidney beans + 1 cup black beans, dry, soaked overnight in 4 cups water then drained*
- 3 cups additional water (if making to save in fridge, add 1/2 cup additional water)
- 7 oz creamed coconut, unsweetened
- 6 cloves garlic, large, smashed
- 2 tsp paprika*
- 2 tsp Himalayan pink sea salt, to taste
- 1 tsp ginger powder
- 1/2 tsp cumin
- 2 – 3 tsp dried tomato bits*
Rinse beans and place in crock pot along with other ingredients except dried tomatoes, stirring til combined. Cook on high til tender, about 6 hours.
If you like a little crunch like I do, sprinkle with dried tomato bits just before serving. If not, you can stir them in in advance and let ’em soften up. Either way, enjoy!

*PS: Paprika and tomatoes are nightshades so those of you are sensitive to them can nix that part. It’ll still be delicious, I promise!
