Cinnamon Bun Bites

The day that I made these was a travesty. A loving and beautiful mess. I couldn’t get anything right!

Well, except these … turns out they do taste pretty scrumptious.

Super grateful for my two mega-patient friends, who told me they’d stay as long as it took and helped me with everything. If you were there you really would know … Above and beyond … That’s where they went!

Anyone else woulda left ten times earlier, for SURE! (And I woulda *totally* understood. For real!)

Without further ado … allow me to present … a yummy delicious healthiER holiday treat to whip up for your favorite family and friends.

Cinnamon Bun Bites with Ooey-Gooey Cashew Icing Recipe 

Bites

  • 1 1/2 cup pitted dates
  • 1 1/2 cup raw pecans
  • 1 1/2 tsp+ cinnamon

Icing

  • 1 cup raw cashew butter
  • 1/2 cup maple syrup
  • 1 tbsp coconut oil
  • 1 tbsp coconut butter
  • 5 tbsp lemon juice
  • Water, as needed

Blend icing ingredients in food processor, adding a tiny bit of water at a time til smooth, creamy and thickly gooey. Store in fridge.

In food processor, mix dates, pecans and cinnamon til well blended. Roll into balls then roll in more cinnamon to coat.

Drizzle with icing and if you’re feeling extra decadent, serve with a little bowl of icing to dip in. Yum!
