This one was a lil’ bit of a surprise.

Ok shock … I was shocked, really. I’d rate it right there at the top of the list flavor-wise. Who knew apples ‘n onions would play so nicely together!

Momma’s crazy idea … and the madness paid off!

Yes, yes, I just checked … On the back there’s a victorious “10!” marked in pencil, which is a very good sign. See, I rate my recipes 1-10, so I remember. Recipe-wise, I have only 8’s, 9’s and 10’s, after being schooled on this years ago.

See I used to rate songs on my iPod this way. A wise friend once asked, “Why do you mark some of them 5?”

Me: “Cuz they’re just so-so!”

Friend: “Then why do you even keep them?”

Good point.

Brown Rice Rotini with Onion & Green Apple Recipe

Cook pasta, drain and set aside. Sauté onion and green apple with coconut oil and salt in large frying pan til apples are soft and onions are golden brown. Add pasta, cover and heat through. Sprinkle more salt til the flavors pop. Enjoy!

Momma has this thing about flavors popping. I don’t know if that’s an actual culinary “thing” but she sure seems to be right. When we salt it, the apple flavor really does seem to sing.
