Shout-out to my momma, who joined me in this food adventure. We tossed together two things we just happened to have on hand and it wound up a winner!
Not only was this *way* more delish than I ever even expected but I was actually *excited* to rediscover it in my fridge the next day! Now that really says something!

Braised Kale ‘n Beans Recipe
- 1 big bunch curly kale
- 3 tbsp extra-virgin olive oil
- 1 Spanish onion, chopped
- 2 cloves garlic, crushed
- 1 can cannellini beans, 15 oz or 1 1/2 cups
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
Saute onion and garlic with olive oil in a large pan on medium low heat until onions soften and begin to caramelize. (Optional: Stir in 3 tbsp of liquid from the can of cannellini beans.) Sprinkle salt and pepper on drained beans and set aside. Add kale to pan, stirring well to coat. Cook covered until kale softens, approx 10 min, stirring in beans for the last 5 min. Enjoy!
