It’s all momma’s fault. I never in a million woulda thought of making this and in fact had said “no” (knee-jerk reaction) when first she suggested it. (What was I thinking? It’s great!)
But we had this new mayo from Primal Kitchen so it seemed an adventure was calling us. I wound up discovering that I love waldorf-ish salad! This one’s got a nice little punch with the addition of the diced onions. Yum!

Arugula Waldorf-ish Salad Recipe
- 1 cup baby arugula, chopped
- 1 Pacific Rose or Gala apple, chopped (first set aside a few sliced pieces for garnish)
- 1 tbsp Primal Kitchen Avocado Oil Mayo
- 1 tbsp raw walnuts, chopped (set aside a few while walnuts for garnish)
- 1 tsp red onion, diced
Toss arugula and chopped apple with mayo to coat. Quickly mix in chopped walnuts and onion. Garnish with sliced apple and whole walnuts. Enjoy!
